  1. Crack an egg or two into a bowl, add the salt and pepper, and whisk with a fork to incorporate the egg yolks and whites together
  2. Dice 1 slice of onion into small pieces
  3. Dice 2 strips of sweet pepper into small pieces
  4. Crumble 1 or 2 slices of bacon into small pieces
  5. Add the onion, peppers and bacon into the egg mixture and stir to ensure that everything is covered in the mixture
  6. Add 1 tsp butter to a non-stick pan heated to medium
  7. When butter is melted, add egg mixture to pan – use a spatula to evenly spread the onion, pepper and bacon pieces
  8. Cook on medium heat 2-3 minutes

Tips for Success

1. Dice everything small and evenly

Peppers, onions, and bacon should be finely diced so they cook quickly and distribute evenly through the eggs.

2. Whisk eggs well—but not aggressively

Whisk until yolks and whites are fully combined and slightly frothy. Over-whisking can make eggs tough.

3. Don’t rush the eggs

Cook eggs over medium-low heat. High heat makes them rubbery instead of soft and fluffy.

4. Use the right pan

A nonstick skillet (8–10 inches) makes flipping and folding easier and helps prevent sticking.

5. Let it rest briefly before slicing

Give the omelet or sandwich 1–2 minutes to settle. This helps the eggs firm up slightly and makes everything easier to cut and eat.

Variations and Substitutions

1. Cheese:

Sharp cheddar is a popular addition, added to the top of the omelette while it melts in the pan.

2. Meat:

Diced ham is an original core ingredient of a toasted western sandwich and can be used instead of bacon – or use both!

3. Vegetables:

Mushrooms or diced tomatoes are delicious additions.

4. Condiments:

Ketchup, hot sauce, mayonnaise, or HP sauce can enhance your sandwich with flavor.
